A leading authority on nutrition and holistic therapies with a Ph.D. in Food Science and Nutrition, Dr. (Mrs.) Jyoti Singh, is presently attached with Government Home Science College, Chandigarh. She has been writing various articles in nutrition for Hindustan Times and Times of India. Her articles have appeared in many renowned journals like Journal of Research, SKUAST-J, Himachal Journal of Agricultural Research, Beverage and Food World, and Journal of Dairying, Foods & Home Sciences to name a few. Adding to her credit is the research on soybean and Dr. Jyoti has been successful in bringing out several important features of soybean paneer (Tofu) into the limelight. Being a bright student right through her academic phase, she has won various scholarships for her B.Sc., M.Sc. and Ph.D. She also has two gold medals to her credit. Dr. Jyoti had a major breakthrough in her research when she worked on food consumption behaviour and nutrient adequacy of army personnel in selected cantonment areas.
This book has been written as a text for courses on food science, nutrition, dietetics, nursing, students of home science, agriculture, hotel management and practicing dieticians. Health conscious people can gain an insight into nutrition and dietetics, which plays an important role in our daily life. This book illustrates the general principles of nutrition and diet therapy, which are involved in diet planning.
